Butternut Squash Soup


So Saturday night I made butternut squash soup with toasted coconut and cilantro.  It was delicious.  

I peeled and chopped my butternut squash  (which Cappie ended up
 loving, and is very nutritious for dogs) and my onion (which are actually poisonous to dogs, so don't feed your dogs onions) into big hunks and I roasted them together for about 45 minutes until they were fork tender.

Then when that was done I put it in a blender with a little water and pulsed the mixture until it was a smooth consistency.  I put it in my pot with about 2 cups of good vegetable stock, a teaspoon of turmeric for color, a tablespoon of curry powder, some salt and pepper. When it came to a simmer I added a splash of cream.  Just enough to give it a little smoothness.

For garnish, I put some regular grated coconut on a sheet pan and broiled it for about 3 minutes until it was a soft brown color.  Sprinkle on top with a sprig of cilantro.

My newest news


So I got my first ad in
The South, and it will be published in the April/May issue.  It was for The Wright Square Cafe, and it's really exciting.  I photographed some of their Easter chocolates, and I have to say, it turned out really great. 

I'm so excited!  I have another shoot today at the Distillery.  Their grand opening event is this afternoon at 3.  I'm just thinking, though, how long is this going to last?  It's a bar so it's going to be open till 2:00AM so, okay... I'm just wondering what the deal is.  I'm just going to go and have a good attitude.

To come this week:  I just went to the grocery store and this week I plan to cook Italian turkey stuffed zucchini, Butternut squash soup, pot roast and tandoori chicken with grilled vegetables.  Pictures will be posted!

Internship



I started a new internship this past week with
The South Magazine.  I am pretty excited about it.  My first assignment is now officially on their website, and my name is on the bottoms of all the pictures I took, so I couldn't be more thrilled.  This is an unpaid position right now, but I'm hoping that this great opportunity will open doors for me.  So that's fun.  I even have another assignment this weekend at The Distillery, a new bar in Savannah that's supposed to be like a Speak-Easy.  

Other cool things to look into: St. Patrick's Day is coming up, so get out your tacky beads, "Beer Goggles" and green blazers for the party of the year in Savannah.  The Savannah Music Festival is coming up, so that is also a really big deal.  Bonnie Rait was supposed to be here, but I think some big thing happened to her and she had to postpone.  

Also, I want to look into the new restaurant down the street from me called "bar  |   food"  It's supposed to be very good.  They are working on acquiring their liquor license, so I want to wait until the "bar" half of the business opens in case they have any signature drinks.  I will give a detailed review soon.
